Spiced Couscous


A vibrant mix of herbs and spices boosts the flavour of couscous in this delicious recipe.

The ingredient of Spiced Couscous

  • 1 tbsp olive oil
  • 750ml 3 cups boiling water
  • 570g 3 cups couscous
  • 2 tsp ground sweet paprika
  • 1 2 tsp ground cumin
  • 1 2 tsp ground coriander
  • 1 2 tsp ground cinnamon
  • 1 2 tsp ground turmeric
  • 1 2 red onion halved finely chopped
  • 1 fresh long green chilli deseeded finely chopped
  • 2 tbsp finely chopped fresh continental parsley
  • 2 tbsp finely chopped fresh coriander
  • 2 garlic cloves finely chopped
  • 1 tbsp fresh lemon juice

The Instruction of spiced couscous

  • to make the chermoula place the paprika cumin ground coriander cinnamon and turmeric in a frying pan over medium heat and cook for 30 seconds or until aromatic transfer to the bowl of a food processor add onion chilli parsley fresh coriander garlic and lemon juice and process until a smooth paste forms season with salt and pepper
  • heat oil in a saucepan over high heat add 1 tablespoon of the chermoula and cook stirring for 1 minute or until aromatic add water and bring to the boil remove from heat and add the couscous use a fork to combine cover and set aside for 5 minutes or until the liquid is absorbed
  • use a fork to separate the grains spoon into a serving bowl to serve
