  • 150g 1 cup self raising flour
  • 100g 1 2 cup caster sugar
  • 125ml 1 2 cup thick vanilla custard
  • 2 eggs
  • 80g butter melted cooled plus extra to brush
  • 2 red apples quartered core removed thinly sliced
  • cinnamon sugar to sprinkle

  • sift the flour and sugar into a mixing bowl and make a well in the centre whisk the custard and eggs together and add to the well with the melted butter use a large metal spoon to fold until just combined
  • cut four 10cm squares of baking paper preheat a pie maker and lightly grease each hole pour 1 4 cup of the custard mixture into each hole top with 4 5 slices of apple then cover each loosely with a square of baking paper close the pie maker and cook for 10 minutes or until a skewer inserted in the centre of the cakes comes out clean
  • carefully lift out cakes and transfer to a wire rack repeat using the remaining batter and apple to make 4 more cakes
  • while still warm brush each cake with the extra melted butter and sprinkle with cinnamon sugar serve
