Known as streuselkuchen in Germany, this delicious tea cake is topped with custard and a sugary crumble topping.

- 150g butter chopped at room temperature
- 100g 1 2 cup caster sugar
- 1 tsp vanilla extract
- 2 eggs
- 150g 1 cup self raising flour
- 75g 1 2 cup plain flour
- 125ml 1 2 cup milk
- 50g 1 3 cup custard powder
- 55g 1 4 cup caster sugar
- 500ml 2 cups milk
- 75g 1 2 cup plain flour
- 35g 1 4 cup custard powder
- 45g 1 4 cup brown sugar lightly packed
- 55g 1 4 cup caster sugar
- 100g butter chopped

- preheat oven to 180c 160c fan forced grease a 23cm square cake pan and line with baking paper extending the paper over 2 sides
- to make the custard combine the custard powder and sugar in a medium saucepan add 60ml 1 4 cup of the milk and stir until smooth stir in the remaining milk cook stirring over medium heat for 5 minutes or until mixture comes to the boil and thickens transfer to a large bowl set aside stirring often until cooled to room temperature
- to make the topping combine the flour custard powder brown sugar and caster sugar in a large bowl use your fingertips to rub the butter into the flour mixture until the mixture resembles coarse breadcrumbs set aside
- use electric beaters to beat the butter sugar and vanilla together until pale and creamy add the eggs one at a time beating well after each addition add the flour and milk use a spatula to fold until combined
- spread cake batter into the prepared pan stir the custard to loosen then spread evenly over the batter sprinkle the topping over the custard bake for 45 minutes or until set set aside in the pan for 10 minutes
- use the paper to lift the cake from the pan cut into squares and serve warm or at room temperature
