- 800g sebago potatoes peeled roughly chopped
- 60g butter chopped
- 1 3 cup milk warmed see note
- 1 cup grated cheddar
- 2 tbsp extra virgin olive oil
- 2 streaky bacon rashers finely chopped
- 2 brown onions halved thinly sliced
- 2 garlic cloves crushed
- 1 3 cup brown sugar
- 2 tbsp red wine vinegar
- 1 tbsp finely chopped fresh at leaf parsley

- place potato in a large saucepan cover with cold water bring to the boil boil for 15 minutes or until very tender drain well return potato to saucepan over low heat shaking pan gently for 1 to 2 minutes or until water has evaporated using a potato masher mash until smooth add butter warm milk and half the cheese beat with a wooden spoon until fluffy season with salt and pepper
- meanwhile heat half the oil in a frying pan over medium high heat add bacon cook stirring for 3 to 4 minutes or until crisp using a slotted spoon transfer bacon to paper towel to drain reduce heat to medium low add remaining oil to pan add onion and garlic cook stirring occasionally for 10 minutes or until onion has softened add sugar and vinegar cook stirring for 2 to 3 minutes or until sugar has dissolved and mixture has caramelised stir in 3 4 of the bacon
- spoon mashed potato into a serving dish top with caramelised onion and remaining cheese sprinkle with remaining bacon and parsley serve
