Spruce up snack time with these Special K crackle slices, packed full of goodies.
The ingredient of Healthier Special K Crackle Slice
- 1 tbsp black chia seeds
- 5 cups special k original
- 1 2 cup desiccated coconut plus 1 tsp extra
- 1 4 cup dried apricots finely chopped
- 1 4 cup sultanas
- 1 4 cup pistachio kernels finely chopped
- 1 1 4 cups coconut oil
- 1 4 cup honey
- 1 4 cup almond brazil and cashew spread
- 1 4 cup raw cacao powder
The Instruction of healthier special k crackle slice
- grease a 16cm x 26cm slice pan line with baking paper extending paper 2cm above edge on all sides place chia seeds and 2 tablespoons water in a small bowl stir to combine stand for 10 minutes stirring occasionally or until water has absorbed and mixture is thick
- meanwhile place cereal in a large bowl using your hands lightly crush add coconut apricot sultanas and 2 tablespoons pistachios stir to combine
- place coconut oil honey spread and cacao in a small saucepan over low heat cook stirring for 3 to 4 minutes or until melted and smooth bring to a simmer remove from heat add to cereal mixture with chia seed mixture stir well to combine spoon mixture into prepared pan pressing down with the back of a spoon to level sprinkle over remaining pistachios and extra coconut cover refrigerate for 4 hours or until set
- remove slice from pan cut into squares serve
