  • 4 rindless bacon rashers
  • 4 about 600g beef fillet steaks
  • 1 tbsp olive oil
  • 1 small red onion halved thinly sliced
  • 1 x 420g can cannellini beans drained rinsed
  • 5 about 210g marinated artichoke hearts quartered
  • 80g 1 2 cup pitted kalamata olives
  • 65g goats cheese crumbled
  • 1 2 cup fresh basil leaves

  • wrap 1 rasher of bacon around each piece of steak use toothpicks to secure
  • place a large non stick frying pan over medium high heat add the beef and cook for 3 minutes each side for medium or until cooked to your liking transfer to a plate and cover with foil set aside for 5 minutes to rest
  • meanwhile heat the oil in the pan over medium heat add the onion and cook stirring occasionally for 2 minutes or until soft add the beans artichoke and olives and cook stirring for 1 minute or until heated through
  • divide the onion mixture among serving plates sprinkle with the goats cheese and basil top with beef and serve
