Blueberry Lemon Friands


These tasty friands are a delicious breakfast or morning tea idea.

The ingredient of Blueberry Lemon Friands

  • 125g butter chopped
  • 2 3 cup almond meal ground almonds
  • 2 lemons rind finely grated
  • 1 1 4 cups pure icing sugar sifted
  • 1 4 cup plain flour sifted
  • 3 eggwhites
  • 150g frozen blueberries

The Instruction of blueberry lemon friands

  • preheat oven to 200c line eight 1 3 cup capacity muffin holes with paper cases
  • place butter in a small saucepan over medium heat heat for 8 to 10 minutes or until melted and light golden remove from heat and allow to cool for 10 minutes
  • combine almond meal lemon rind icing sugar and flour in a bowl add eggwhites and mix well add melted butter and stir to combine spoon batter into muffin holes until each is three quarters full press blueberries into the top of each friand
  • bake for 20 to 25 minutes or until a skewer inserted into the centre comes out clean cool in pan for 5 minutes before turning onto a wire rack to cool completely serve
