Ultimate Quarantine Soup Recipe


Feeling a little under the weather? Cheer yourself up with a big, warming bowl of healthy soup loaded with immune-boosting ginger, turmeric and chilli.

The ingredient of Ultimate Quarantine Soup Recipe

  • 2 tbsp extra virgin olive oil
  • 1 brown onion finely chopped
  • 3 garlic cloves finely chopped
  • 1 tbsp chopped fresh ginger
  • 2 tsp ground turmeric plus extra to sprinkle optional
  • 1 tsp cumin seeds crushed
  • pinch dried chilli flakes plus extra to sprinkle optional
  • 400g can tomato polpi or crushed tomatoes
  • 3 tsp vegetable or chicken stock powder
  • 4 dried bay leaves
  • 400g can lentils drained rinsed
  • 400g can chickpeas drained rinsed
  • 150g frozen spinach
  • juice of half a lemon plus extra wedges to serve
  • greek yoghurt to dollop

The Instruction of ultimate quarantine soup recipe

  • heat the oil in a large saucepan over high heat add the onion reduce heat to low and cook stirring occasionally for 5 minutes or until softened add the garlic and ginger and cook stirring for 1 minute or until aromatic add the turmeric cumin and chilli and stir to coat
  • add the tomato to the saucepan fill the empty tomato can with water and add to the saucepan add another can of water stir in the stock powder and bay leaves increase heat to high and bring to the boil reduce heat to low and simmer uncovered for 15 minutes stir through the lentils and chickpeas simmer for a further 20 minutes or until thickened
  • add the spinach and cook stirring occasionally for 5 10 minutes or until spinach has thawed add the lemon juice and season
  • divide among serving bowls and serve with yoghurt and extra turmeric and chilli if desired
