Vegan Slow Cooker Pulled Veg


Well take this vegan version of pulled pork over the real thing any day! Serve it with warm tortillas with vegan mayo.

The ingredient of Vegan Slow Cooker Pulled Veg

  • 60ml 1 4 cup peanut oil
  • 2 about 600g eggplant halved lengthways
  • 400g can finely diced tomatoes
  • 125ml 1 2 cup smoky barbecue sauce plus extra to serve optional
  • 1 tbsp brown sugar
  • 250g packet rainbow coleslaw
  • 400g can black beans drained rinsed
  • tortillas grilled to serve
  • 90g 1 3 cup vegan mayonnaise
  • fresh coriander sprigs to serve

The Instruction of vegan slow cooker pulled veg

  • heat the oil in a large non stick frying pan over high heat add the eggplant cut side down and cook for 5 minutes or until golden place cut side up in a slow cooker
  • add the tomato barbecue sauce and brown sugar to the slow cooker season cover and cook on low for 6 hours use tongs and a fork to shred the eggplant add the coleslaw mix and the beans and stir to coat cook on low for a further 30 minutes
  • serve the pulled vegetables in a warmed tortilla drizzle with mayo extra barbecue sauce if you like and top with coriander sprigs
