Butterscotch Impossible Pie Recipe


This pie has a lovely, slightly wobbly filling that resembles a baked custard. Brown sugar and butter give it that butterscotch flavour. Did we mention it takes 5 minutes to prep?

The ingredient of Butterscotch Impossible Pie Recipe

  • 4 eggs
  • 230g 1 cup brown sugar firmly packed
  • 125g butter melted cooled
  • 100g 2 3 cup plain flour
  • 100g 1 cup desiccated coconut
  • 340ml can evaporated milk
  • 300ml thickened cream
  • icing sugar to serve
  • double cream to serve

The Instruction of butterscotch impossible pie recipe

  • preheat oven to 180c 160c fan forced grease a 4cm deep 26cm ceramic pie dish
  • place eggs sugar butter flour coconut evaporated milk and cream in a food processor and process until smooth see note pour into prepared dish bake for 55 to 60 minutes or until set on top and slightly wobbly in the centre set aside to cool then refrigerate for one hour to chill
  • dust with icing sugar and dollop with cream serve
