Rhubarb Salsa


Whip together this quick and easy 10-min salsa this spring. Best paired with grilled lamb cutlets, barbecued pork cutlets and grilled salmon or chicken.

The ingredient of Rhubarb Salsa

  • 1 2 bunch rhubarb ends trimmed finely chopped
  • 2 ripe tomatoes finely chopped
  • 1 red onion finely chopped
  • 2 radishes finely chopped
  • 1 2 cup coarsely chopped coriander
  • 2 tbsp extra virgin olive oil
  • 1 lemon zested juiced
  • lemon wedges to serve
