Banana Mug Cake Recipe


This simple dessert for two is a great way to use up some ripe bananas. During cooking, the cake will rise up a lot but sink down when it comes out of the microwave.

The ingredient of Banana Mug Cake Recipe

  • 1 very ripe banana well mashed
  • 1 egg
  • 1 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 1 2 tbsp greek yoghurt
  • 1 2 tsp vanilla extract
  • 55g 1 3 cup wholemeal self raising flour
  • 1 tbsp dark choc chips
  • ground cinnamon to dust optional

  • lightly grease two 250ml 1 cup microwave safe mugs
  • whisk the banana egg maple syrup oil yoghurt and vanilla in a bowl until well combined add the flour and gently mix through with a spatula until just combined gently fold in the choc chips
  • divide the banana mixture between the prepared mugs microwave one at a time on high for 1 minute 30 seconds each or until springy when lightly touched in the centre see notes
  • sprinkle lightly with cinnamon if using set aside for 2 minutes to cool before serving
