This refreshing Vietnamese cooler provides the perfect start to an Asian-style banquet.

The ingredient of Ginger And Lemongrass Cooler

  • 2 stalks lemongrass white part only sliced
  • 6cm piece fresh ginger sliced
  • 3 4 cup caster sugar
  • lemongrass stalks see note to serve
  • ice cubes to serve

The Instruction of ginger and lemongrass cooler

  • place lemongrass ginger and sugar in a saucepan add 8 cups cold water bring to the boil over high heat reduce heat to low simmer for 15 minutes set aside for 30 minutes to cool transfer mixture to an airtight container refrigerate until chilled
  • strain lemongrass mixture through a fine sieve in a large jug discard solids place ice cubes and lemongrass stalks if using in glasses top up with lemongrass mixture serve
