- 2 tsp olive oil
- 3 rindless short cut bacon rashers chopped
- 60g button mushrooms halved sliced
- 30g 1 u20442 cup finely grated cheddar
- 20g baby spinach shredded plus extra leaves to serve
- 5 eggs
- 60ml 1 4 cup thickened cream
- 4 cherry tomatoes halved horizontally
- toast to serve

- heat the oil in a small frying pan over medium heat cook the bacon for 3 minutes or until lightly browned transfer to a plate add the mushroom to the pan and cook for 2 minutes or until softened transfer to the plate with the bacon and set aside to cool slightly
- preheat a pie maker combine the bacon mushroom cheddar and spinach in a bowl and set aside whisk together the eggs and cream in a jug and season well
- turn off the pie maker lightly grease the pie maker holes divide half the bacon mixture among the prepared holes pour half the egg mixture over the top place a cherry tomato half cut side up in the centres close the lid and turn on the pie maker cook for 5 minutes or until set and golden brown
- lift out the frittatas and transfer to a plate repeat with the remaining bacon and egg mixtures
- serve frittatas with toast and extra spinach
