Oat Breakfast Waffles With Blueberry Elderflower Compote


You dont need a fancy restaurant to dine like royalty at breakfast or brunch. These oat, blueberry and elderflower waffles taste amazing and will make any guest feel special.

  • 2 1 4 cups self raising flour
  • 1 2 cup quick rolled oats
  • 1 3 cup caster sugar
  • 4 eggs
  • 2 1 3 cups milk
  • 160g butter melted cooled
  • 2 tsp vanilla extract
  • 1 2 cup plain greek style yoghurt to serve
  • 1 vanilla bean split
  • 1 1 3 cups caster sugar
  • 1 4 cup elderflower cordial see notes
  • 500g frozen blueberries

  • preheat oven to 150c 130c fan forced place a wire rack over a large baking tray and place in oven
  • preheat waffle maker following manufactureru2019s directions combine flour oats and sugar in a bowl make a well in the centre whisk eggs milk butter and vanilla in a large jug gradually add egg mixture to flour mixture whisking until almost smooth and combined
  • pour 1 3 cup of batter into waffle maker close lid cook for 1 minute 30 seconds to 2 minutes or until golden and cooked through transfer to wire rack in the oven to keep warm repeat with remaining batter to make 12 waffles in total
  • meanwhile make blueberry and elderflower compote using a knife scrape vanilla seeds from bean place vanilla seeds and pod sugar cordial and 1 cup water in a medium saucepan over medium heat cook stirring for 2 to 3 minutes or until sugar has dissolved bring to the boil reduce heat to low simmer for 8 minutes or until slightly thickened add blueberries simmer for 10 minutes or until blueberries start to collapse
  • serve waffles with yoghurt and blueberry and elderflower compote
