Banana Custard Cake Recipe


Gooey banana custard on the bottom and fluffy crumb on the top. You only mix one batter but end up with two distinct layers - this cake is a little bit magic.

The ingredient of Banana Custard Cake Recipe

  • 155g 3 4 cup caster sugar
  • 4 eggs at room temperature separated
  • 125ml 1 2 cup banana puree see notes
  • 125g butter melted cooled
  • 100g 2 3 cup plain flour
  • 35g 1 4 cup custard powder
  • 500ml 2 cups milk warmed
  • icing sugar to dust

The Instruction of banana custard cake recipe

  • preheat oven to 160c 140c fan forced tear a large square of foil and line with baking paper release the base from a 20cm round springform pan line the base with baking paper and foil allowing a 4cm overhang secure the base back in the pan lightly grease the side of the pan
  • reserve 1 tablespoon of the sugar place the egg yolks and remaining sugar in a large bowl use electric beaters to beat for 2 to 3 minutes or until very pale and thick beat in the banana puree slowly pour in the butter beating to combine sift over the flour and custard powder with the beaters on low beat until just combined gradually beat in the milk
  • use clean electric beaters to beat the egg whites in a bowl until soft peaks form add the reserved sugar and beat until firm peaks form fold the egg white mixture into the flour mixture until almost combined there will still be some lumps of egg white gently pour into the prepared pan
  • bake for 1 hour or until the cake is just set it will wobble very slightly set aside in the pan for 2 to 3 hours to cool completely
  • to serve run a knife around the edge of the cake to loosen then unclip and remove the side of the pan cut into wedges and serve lightly dusted with icing sugar
