- 2 white peaches cut into wedges
- 2 plums cut into wedges
- 2 kiwifruit sliced
- 2 passionfruit halved
- 1 mango cheeks scored halved
- 2 starfruit sliced
- 1kg plain greek style yoghurt
- 1 3 cup icing sugar mixture sifted
- 2 tsp vanilla bean paste
- 1 4 tsp salt
- 2 tbsp honey
- 2 tbsp golden syrup
- 1 4 cup vegetable oil
- 1 1 4 cups traditional rolled oats
- 3 4 cup pecans chopped
- 2 3 cup natural sliced almonds
- 3 4 cup pepitas
- 1 2 cup sunflower seeds
- 1 tsp ground cinnamon
- 1 4 cup finely chopped dried soft and juicy apricots
- 1 4 cup finely chopped dried pineapple
- 1 4 cup goji berries
- 1 1 2 tbsp sesame seeds
- 1 2 cup caster sugar

- make vanilla labne combine yoghurt icing sugar vanilla and salt in a bowl line a large sieve with 2 layers of muslin cloth or 5 layers of paper towel set sieve over a bowl spoon yoghurt mixture into lined sieve tie into a bundle with an elastic band place a saucer on top refrigerate overnight
- make toasted summer muesli preheat oven to 190c 170c fan forced line a large baking tray with sides with baking paper place honey golden syrup and 1 tablespoon oil in a small saucepan over low heat cook for 2 minutes or until smooth and combined combine oats pecans almonds pepitas and seeds on prepared tray sprinkle with cinnamon drizzle with syrup mixture stir to coat bake stirring halfway through cooking for 20 minutes or until golden and toasted set aside for 30 minutes to cool add apricots pineapple goji berries and remaining oil stir until well combined cool completely
- meanwhile make sesame praline place sesame seeds on a baking tray lined with baking paper combine sugar and 1 2 cup water in a saucepan over medium heat cook stirring for 2 to 3 minutes or until sugar is dissolved bring to the boil boil without stirring for 8 to 10 minutes or until mixture turns golden brushing down side of pan with cold water if sugar crystals start to form working quickly pour toffee over sesame seeds on tray set aside for 15 minutes or until set finely chop praline
- spoon labne into a small serving bowl sprinkle with a little praline arrange fruit muesli and bowl of labne on a large serving platter serve with remaining praline
