Lemon Syrup Cakes


A sponge cake made extra moist and sticky by the addition of lemon syrup.

The ingredient of Lemon Syrup Cakes

  • 1 cup caster sugar
  • 1 cup self raising flour
  • 40ml milk
  • 2 eggs
  • 1 lemon finely grated rind only reserve juice for syrup
  • 125g butter melted
  • reserved lemon juice
  • 1 tbsp caster sugar

The Instruction of lemon syrup cakes

  • preheat oven to 190c or 170c fan forced
  • place all ingredients except those for syrup into a bowl and mix with wooden spoon until smooth
  • grease a 6 hole texas muffin pan place 1 3 cup of mixture into each hole bake for 20 mins stand for 5 mins turn out onto a wire rack drizzle with syrup while warm
  • syrup mix juice and sugar in a small saucepan and cook over medium heat for 5 mins until slightly thickened
