A sponge cake made extra moist and sticky by the addition of lemon syrup.
The ingredient of Lemon Syrup Cakes
- 1 cup caster sugar
- 1 cup self raising flour
- 40ml milk
- 2 eggs
- 1 lemon finely grated rind only reserve juice for syrup
- 125g butter melted
- reserved lemon juice
- 1 tbsp caster sugar
The Instruction of lemon syrup cakes
- preheat oven to 190c or 170c fan forced
- place all ingredients except those for syrup into a bowl and mix with wooden spoon until smooth
- grease a 6 hole texas muffin pan place 1 3 cup of mixture into each hole bake for 20 mins stand for 5 mins turn out onto a wire rack drizzle with syrup while warm
- syrup mix juice and sugar in a small saucepan and cook over medium heat for 5 mins until slightly thickened
