  • 125ml 1 2 cup ayam satay sauce
  • 160ml can coconut milk
  • 1 1 2 tbsp fresh lime juice
  • 2 x 250g packets microwave coconutu00a0basmati rice
  • 1 carrot peeled shredded
  • 1 lebanese cucumber thinly sliced
  • 4 radishes trimmed thinly sliced
  • 1 barbecue chicken meat shredded
  • 1 3 cup fresh coriander leaves
  • 3 green shallots thinly slicedu00a0diagonally
  • lime wedges to serve

  • combine the satay sauce and coconut milk in a small saucepan over medium heat cook for 2 minutes or until the mixture comes tou00a0a simmer remove from heat and stir through the lime juice
