• 200g packet coles deli style chicken nugget chips
• 40g 1 4 cup plain flour
• 2 eggs lightly beaten
• 400g chicken breast fillet cut into 3cm pieces
• aioli to serve

• preheat oven to 200c 180 fan forced line a large baking tray with baking paper
• process the chips in a food processor until fine crumbs form transfer to a bowl
• place the flour and egg in separate bowls working in batches toss the chicken in the flour and then dip in the egg allowing excess to drain dip in the chips pressing well to coat place on the prepared tray place in the fridge for 15 minutes to rest
• spray the nuggets with cooking oil and cook in the oven turning halfway for 20 25 minutes or until golden
• serve the nuggets with aioli or dipping sauce of choice
