Who can resist a seafood platter loaded with oysters, prawns and lobsters its certain to be a summer success.
The ingredient of Seafood Platter Recipe
- 12 cooked king prawns
- 12 oysters in the shell
- 80ml 1 3 cup kewpie japanese dressing sesame soy sauce
- 1 lime rind finely grated juiced
- 1 long fresh red chilli finely chopped
- 2 green shallots finely chopped
- pink himalayan salt to serve
- 12 scallops roe removed shells reserved
- 40g herb and garlic butter available from the seafood counter
- 185ml 3 4 cup whole egg mayonnaise
- 65g 1 4 cup sour cream
- 1 lemon rind finely grated
- 3 tsp dijon mustard
- 2 tbsp finely chopped dill

- to make the japanese vinaigrette combine the dressing lime rind and 1 tbs juice in a bowl add the chilli and shallot transfer to a serving jug
- arrange oysters on pink salt top oysters with the japanese vinaigrette and serve remaining dressing in the jug
- for the scallops in herb butter lightly spray a frying pan with oil heat over medium high heat cook scallops for 30 seconds to 1 minute each side or until golden and just cooked through transfer to their shells
- melt the butter in the pan for 2 3 minutes drizzle over the scallops drizzle any leftover butter over lobster or oysters
- for the dill mustard and lemon dip whisk mayo sour cream lemon rind mustard and dill in a bowl until smooth and combined season
