Mediterranean Fritters


These crunchy Mediterranean fritters make for a quick and easy snack or bite-sized finger food.

The ingredient of Mediterranean Fritters

  • 150g 1 cup plain flour
  • 1 tsp baking powder
  • 1 egg lightly whisked
  • 120g feta crumbled
  • 40g 1 4 cup mixed pitted olives chopped
  • 2 tomatoes quartered seeds removed flesh finely chopped
  • 1 4 cup fresh basil leaves chopped plus extra to serve
  • extra virgin olive oil to deep fry
  • garlic dip to serve
  • micro herbs to serve optional

  • whisk together the flour baking powder and a pinch of salt in a bowl make a well in the centre add the egg and 2 tbs water stir until a stiff batter forms stir in the feta olives tomato and basil
  • pour oil to come one quarter of the way up the side of a wok or large saucepan place over medium high heat heat oil to 160u00b0c on a cooku2019s thermometer add 1u20444 cupfuls of mixture to the oil deep fry turning halfway for 3 minutes or until golden and cooked through drain on paper towel repeat with the remaining mixture serve with garlic dip sprinkle with micro herbs if you like
