Nacho Bowl With Fajita Chicken Recipe


Made from corn chips and cheese, this dinner bowl is filled with fajita-spiced charred chicken, fresh Mexican-style salad and loads of veg.

The ingredient of Nacho Bowl With Fajita Chicken Recipe

  • 2 lilydale free range chicken tenderloins
  • 1 tsp fajita spice mix
  • 2 tbsp olive oil
  • 1 2 red onion cut into wedges
  • 1 2 red capsicum deseeded coarsely chopped
  • 125g can black beans rinsed drained
  • 2 tsp fresh lime juice
  • 100g sweet potato peeled cut into 5mm thick slices
  • 1 2 baby cos lettuce thinly shredded
  • 1 2 small avocado thinly sliced
  • 4 small cherry tomatoes halved
  • sour cream to serve
  • 1 2 lebanese cucumber peeled into ribbons to serve
  • fresh coriander sprigs to serve
  • thinly sliced fresh jalapeu00f1o chilli to serve
  • 170g pkt doritos nacho cheese corn chips
  • 160g 2 cups shredded 3 cheese blend

The Instruction of nacho bowl with fajita chicken recipe

  • place tenderloins in a glass or ceramic bowl sprinkle with spice mix and 2 tsp of the oil toss to coat cover with plastic wrap place in the fridge for 30 minutes to marinate
  • meanwhile to make the bowl preheat oven to 180c 160c fan forced line the inside of an 18cm ovenproof bowl with foil place a disc of baking paper in the base place a third of the chips in base and slightly up side sprinkle with a third of the cheese bake for 5 minutes or until cheese is starting to melt add half the remaining chips sprinkle with half the remaining cheese building chips up the side of bowl bake for 5 minutes or until cheese starts to melt repeat with the remaining chips and cheese bake for 15 minutes or until cheese is golden set aside in the bowl to cool completely
  • while the bowl is cooling line a baking tray with baking paper place onion and capsicum on tray drizzle with 1 tbs of oil season well roast for 30 minutes or until tender
  • meanwhile combine beans lime juice and remaining 2 tsp of oil in a bowl
  • preheat a barbecue grill or chargrill pan on medium high cook the sweet potato for 3 4 minutes each side or until tender transfer to a plate place chicken on chargrill and cook for 2 3 minutes each side or until cooked through transfer to a chopping board thickly slice
  • carefully remove the cooled corn chip bowl from the ovenproof bowl peel away the foil and baking paper to assemble the salad fill the bowl with lettuce add roasted vegetables bean mixture sweet potato chicken avocado tomato and sour cream top with cucumber ribbons and coriander sprigs sprinkle with sliced jalapeu00f1o and black pepper to serve
