Vegan Cauliflower Soup

This creamy vegan cauliflower soup is delicious option for lunch or dinner.
The ingredient of Vegan Cauliflower Soup
- 55g 1 3 cup raw cashews
- 1 head about 800g cauliflower cut into florets stems sliced
- 2 tbsp olive oil
- 1 tsp garam masala
- 1 leek trimmed halved thinly sliced
- 1 small brown onion finely chopped
- 2 small celery sticks sliced
- 3cm piece fresh ginger peeled chopped
- 2 garlic cloves chopped
- 1l 4 cups salt reduced gluten free vegan vegetable stock
- 500ml 2 cups unsweetened almond coconut milk
- 1 tbsp olive oil
- 1 1 2 tbsp raw cashews chopped
- 1 long fresh red chilli thinly sliced
- 1 2 tsp ground turmeric
- 2 tbsp fresh lemon juice
The Instruction of vegan cauliflower soup
- place cashews in a bowl and cover with cold water set aside for at least 2 hours or overnight to soak rinse drain
- preheat oven to 200c 180c fan forced line a baking tray with baking paper reserve 3 cauliflower florets place remaining on tray drizzle with 1 tbs of oil sprinkle with garam masala season roast stirring halfway for 25 30 minutes or until golden and tender
- meanwhile heat remaining oil in a large saucepan over medium low heat cook leek onion and celery for 5 minutes or until starting to soften add ginger garlic cook stirring for 5 minutes or until aromatic
- add the roasted cauliflower and soaked cashews stir to combine add the stock bring to boil cover simmer over low heat for 15 minutes or until tender remove from heat stir in the almond coconut milk use a stick blender to blend until smooth
- to make the topping thinly slice reserved cauliflower florets heat oil in a small frying pan over medium high heat add the cauliflower cook turning for 1 2 minutes or until golden push to 1 side of pan add chopped cashew chilli and turmeric cook stirring for 1 minute or until golden and aromatic remove from heat stir in lemon juice
- serve soup with chilli cashew topping and cauliflower florets
