Crispy Vietnamese Pancakes With Tofu Recipe


The perfect light lunch or dinner, these Thai and Vietnamese-inspired tofu pancakes are a plant-based or vegan winner.

  • 175g 1 cup rice flour
  • 2 tbsp cornflour
  • 1 tsp ground turmeric
  • 270ml can coconut milk
  • 80ml 1 u20443 cup sweet chilli sauce
  • 60ml 1 u20444 cup fresh lime juice
  • 2 tsp gluten free soy sauce
  • 200g packet marinated tofu such as thaiflavoured cut into 1cm thick slices
  • 2 green shallots thinly sliced
  • 260g 2 cups bean sprouts
  • 200g 2 cups finely shredded red cabbage
  • 2 carrots peeled shredded
  • butter lettuce leaves to serve
  • 1 bunch fresh coriander leaves picked
  • 1 bunch fresh vietnamese mint or fresh mint leaves picked

The Instruction of crispy vietnamese pancakes with tofu recipe

  • combine the rice flour cornflour and turmeric in a bowl pour in coconut milk and 375ml 11 u20442 cups water whisk until smooth cover and set aside for at least 1 hour or place in the fridge overnight to rest
  • combine the sweet chilli sauce lime juice and soy sauce in a small serving bowl
  • spray a 20cm non stick frying pan with oil and heat over medium high heat cook the tofu for 1 2 minutes each side or until browned transfer to a plate and set aside to cool slightly cut into thin strips wipe pan clean
  • spray the pan with oil and place over medium heat stir the shallot into the pancake mixture pour 1 u20443 cupful of the mixture into the pan swirling to coat the base evenly cover and cook for 2 minutes uncover and place a little of the tofu bean sprouts cabbage and carrot on the pancake cook for a further 3 minutes or until the pancake is crisp underneath fold the pancake over to enclose the filling then transfer to a plate repeat with the remaining pancake mixture stirring between batches tofu bean sprouts cabbage and carrot to make 8 pancakes in total
  • serve with lettuce leaves coriander and mint and with the dipping sauce on the side
