Bacon Wrapped Meatloaf With Roast Vegetables

The ingredient of Bacon Wrapped Meatloaf With Roast Vegetables

  • 500g pork and veal mince
  • 1 small brown onion finely chopped
  • 2 garlic cloves crushed
  • 1 3 cup tomato paste
  • 1 egg lightly beaten
  • 1 2 cup fresh breadcrumbs
  • 2 tsp fresh lemon thyme leaves
  • 1 tbsp fresh oregano leaves chopped plus extra to serve
  • 2 tsp lemon rind finely grated
  • 2 tbsp lemon juice
  • 6 streaky bacon rashers trimmed
  • 1 red onion halved cut into wedges
  • 1 red capsicum thickly sliced
  • 1 bunch baby dutch carrots trimmed scrubbed
  • 2 zucchini roughly chopped
  • 1 tbsp extra virgin olive oil

The Instruction of bacon wrapped meatloaf with roast vegetables

  • preheat oven to 200c 180c fan forced
  • place mince brown onion garlic tomato paste egg breadcrumbs thyme oregano lemon rind and juice in a large bowl season with salt and pepper mix well to combine
  • place bacon rashers crossways and slightly overlapping on a large piece of plastic wrap with 1 long side closest to you spoon mince mixture in a log shape along centre of bacon using plastic wrap as a guide roll up tightly to enclose mince the bacon wonu2019t wrap completely around the mince remove and discard plastic wrap place meatloaf seam side down on a baking paperlined baking tray with sides
  • arrange red onion capsicum carrot and zucchini on tray around meatloaf drizzle meatloaf and vegetables with oil
  • bake for 40 to 45 minutes or until browned and cooked through stand for 5 minutes slice meatloaf thickly serve with roast vegetables and sprinkle with extra oregano
