  • 8 chicken drumsticks
  • 1 tsp mild paprika
  • 2 tbsp olive oil
  • 500g baby coliban chat potatoes halved
  • 6 french shallots peeled halved
  • 3 fresh thyme sprigs plus extra sprigs to serve
  • 3 fresh or dried bay leaves
  • 1 bunch baby carrots peeled trimmed
  • 1 leek halved lengthways coarsely chopped
  • 2 massel beef style stock cubes
  • 160ml 2 3 cup massel beef style liquid stock

  • combine the drumsticks paprika and oil in a large bowl toss to coat heat a large frying pan over medium high heat cook chicken turning often for 5 minutes or until golden transfer to a bowl
  • add the potato and shallot to the pan cook stirring for 5 minutes or until golden add the thyme and bay leaves cook stirring for 1 2 minutes or until aromatic
  • place the potato mixture in a slow cooker top with the carrot and leek crumble over the stock cubes and pour over the stock top with the chicken cover and cook on low for 4 hours or until potato and chicken are tender season with pepper serve scattered with extra thyme
