  • 4 shallots thinly sliced
  • 1 clove garlic thinly sliced
  • zest and juice of 1 lemon
  • 1kg green peas yields 250g shelled peas

  • heat oil in a large deep frying pan over low medium heat add shallots garlic and lemon rind cook stirring for 5 minutes add peas all beans and stock bring to the boil cover simmer gently for 5 minutes
  • add lettuce quarters to pan return to a gentle simmer cover cook for a further 5 minutes or until all vegetables are just tender stir in herbs butter and lemon juice season to taste with salt and pepper then serve immediately
