These vegetarian patties are delicious with a dollop of tzatziki and a squeeze of lemon.
The ingredient of Butter Bean And Vegetable Patties
- 500g orange sweet potato peeled cut into 2cm pieces
- 2 3 cup frozen peas
- 400g can butter beans drained rinsed
- 2 tbsp tomato relish
- 1 2 cup grated cheddar cheese
- 1 egg yolk
- 1 1 4 cups dried breadcrumbs
- vegetable oil for shallow frying
- tzatziki dip to serve
- lemon wedges to serve
The Instruction of butter bean and vegetable patties
- cook potato in a large saucepan of boiling water for 8 to 10 minutes adding peas for last 2 minutes of cooking time drain return potato and peas to pan add beans mash until almost smooth set aside to cool
- add relish cheese and egg season with salt and pepper using 1 3 cup mixture per ball roll mixture into 12 balls flatten slightly place breadcrumbs on a plate coat patties in breadcrumbs place on a plate refrigerate covered for 30 minutes
- heat oil in a frying pan over medium high heat cook patties in batches for 2 to 3 minutes each side or until golden and heated through transfer to a plate lined with paper towel serve with tzatziki and lemon wedges
