  • 2 tbsp vegetable oil
  • 1 tbsp cajun seasoning
  • 60ml 1 4 cup fresh lemon juice or lime juice
  • 2 garlic cloves crushed
  • 60ml 1 4 cup vegetable oil extra
  • 200g mixed salad leaves
  • 1 large avocado halved stone removed peeled cut into 2cm pieces
  • 1 lebanese cucumber peeled into ribbons
  • 1 small red onion halved thinly sliced
  • 1 celery stick trimmed thinly sliced diagonally
