Thai Style Breakfast Omelettes


Packed with vegies, a hit of chilli and fresh lime this Thai-style breaky omelettes recipe is the right way to start your day!

The ingredient of Thai Style Breakfast Omelettes

  • 8 eggs
  • 2 tbsp lime juice
  • 1 1 2 tbsp fish sauce
  • 1 long red chilli thinly sliced
  • 1 1 2 tbsp vegetable oil
  • 100g cup mushrooms thinly sliced
  • 1 medium red capsicum thinly sliced
  • 2 medium tomatoes roughly chopped
  • 150g green beans trimmed halved lengthways
  • 1 cup bean sprouts trimmed
  • 1 2 cup fresh coriander leaves

  • whisk eggs lime juice fish sauce 1 4 cup water and 1 2 the chilli in a large jug
  • heat 2 teaspoons of oil in a medium non stick frying pan over medium high heat cook mushroom and capsicum stirring for 5 minutes or until golden and tender add tomato cook stirring for 2 minutes or until slightly softened
  • meanwhile place green beans in a heatproof bowl cover with boiling water stand for 3 minutes drain rinse under cold water combine mushroom mixture beans and sprouts in a bowl
  • wipe pan clean heat 1 teaspoon of remaining oil in pan over medium high heat pour 1 4 of the egg mixture into pan swirl to coat cook for 30 seconds or until just set slide omelette onto a plate cover to keep warm repeat with remaining oil and egg mixture to make 4 omelettes
  • place 1 4 of the mushroom mixture over one half of each omelette fold over to enclose filling serve sprinkled with coriander and remaining chilli
