Tea Smoked Trout And Apple Salad


Tea, star anise and cinnamon infuse the trout with an aromatic and delicious smoky flavour.

The ingredient of Tea Smoked Trout And Apple Salad

  • 2 tsp sea salt flakes
  • 2 tsp sichuan peppercorns
  • 4 about 180g each 2cm thick ocean trout fillets
  • 200g 1 cup white rice
  • 35g 1 2 cup black tea leaves
  • 4 whole star anise
  • 2 x 7cm cinnamon sticks broken
  • 2 bunches asparagus woody ends trimmed quartered
  • 2 granny smith apples cored thinly sliced lengthways
  • 1 x 80g pkt baby rocket leaves
  • 2 cups watercress sprigs
  • 2 tbsp light soy sauce
  • 1 tbsp peanut oil
  • 1 tsp sesame oil
  • 1 garlic clove crushed
  • 2 tsp finely grated fresh ginger
  • 2 tsp fresh lime juice
  • 2 tsp brown sugar
  • 1 4 tsp chinese five spice
  • salt freshly ground black pepper

The Instruction of tea smoked trout and apple salad

  • place the sea salt flakes and sichuan peppercorns in a mortar and gently pound with a pestle until lightly crushed place the trout on a plate and sprinkle evenly with the salt mixture cover with plastic wrap and place in the fridge for 30 minutes to develop the flavours
  • line a wok with 4 layers of foil combine the rice tea star anise and cinnamon in a bowl place rice mixture in the base of the wok place over high heat place the trout in a single layer in a large bamboo steamer when the rice mixture begins to smoke place the steamer over the wok and cook covered for 10 12 minutes or until trout is just cooked through set aside to cool
  • to make the dressing combine the soy sauce peanut oil sesame oil garlic ginger lime juice sugar and chinese five spice in a screw top jar and shake until well combined taste and season with salt and pepper
  • cook the asparagus in a saucepan of salted boiling water for 2 minutes or until bright green and tender crisp refresh under cold running water drain well
  • place the asparagus in a large bowl with the apple rocket and watercress and gently toss until just combined coarsely flake the trout and add to the salad divide the salad evenly among serving plates drizzle with dressing and serve immediately
