Make your own semi-dried tomatoes at home to add pizazz to sandwiches, quiches and pizza.

- 1kg small roma tomatoes halved lengthways
- 2 tsp sea salt flakes
- 2 large sprigs fresh rosemary
- extra virgin olive oil to cover
The Instruction of semi dried tomatoes
- preheat oven to 120u00b0c 100u00b0c fan forced line 2 large baking trays with baking paper place tomatoes cut side up in a single layer on prepared baking trays sprinkle with salt
- bake tomatoes for 3 to 3 1 2 hours depending on the size of the tomatoes or until tomatoes are almost completely dried set aside to cool
- firmly pack tomatoes and rosemary into a 2 1 2 cup capacity sterilised jar see note carefully pour in enough oil to cover seal
