The ingredient of Pink Grapefruit Raspberry Jellies With Liqueur Cream
- 2 pink grapefruit
- 60ml 1 4 cup cold water
- 2 tbsp caster sugar
- 2 tbsp boiling water
- 1 1 4 tsp powdered gelatine
- 1 3 4 tbsp pure icing sugar
- 24 fresh raspberries or frozen raspberries
- 60ml 1 4 cup thickened light cream
- 2 tsp cointreau liqueur
The Instruction of pink grapefruit raspberry jellies with liqueur cream
- place twelve 30ml shot glasses on a tray covered with a sheet of paper towel use a zester to remove the rind from 1 grapefruit in 2cm long strands alternatively use a vegetable peeler to peel the rind from the grapefruit then remove the white pith and cut rind into long thin strands set zest aside juice both grapefruit and strain the juice into a jug you will need 250ml 1 cup of juice
- line a tray with non stick baking paper place the cold water and caster sugar in a saucepan and stir over low heat until sugar dissolves bring to the boil and add the grapefruit zest cook uncovered for 3 minutes use tongs to transfer the candied zest to the prepared tray separate the strands into 12 even piles set aside
- place the boiling water in a heatproof jug and sprinkle over the gelatine stir with a fork until gelatine dissolves add the grapefruit juice and icing sugar and whisk until the sugar dissolves
- place a raspberry in each shot glass and gently pour the grapefruit juice mixture over the top cover the tray with plastic wrap and place in the fridge for 1 hour or until the jellies are set
- meanwhile to make the liqueur cream place the cream and liqueur in a small jug and stir until combined to serve spoon liqueur cream evenly over the set jellies and top with remaining raspberries and candied zest
