Lemon Cheesecake Pavlova Recipe


This lemon cheesecake pavlova has a fresh and tangy twist - perfect for a hot summers day.

  • 6 egg whites
  • 1 1 2 cups 330g caster sugar
  • 2 tsp cornflour
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • 100g unsalted butter chopped
  • 1 4 cup 60ml lemon juice
  • 2 tsp finely grated lemon rind
  • 1 3 cup 75g caster sugar extra
  • 4 egg yolks
  • 300ml thickened cream
  • 250g farmeru2019s table spreadable cream cheese
  • 1 tbsp icing sugar mixture
  • 1 2 tsp vanilla extract extra
  • 125g raspberries
  • 3 tsp chopped pistachios

The Instruction of lemon cheesecake pavlova recipe

  • preheat oven to 120u00b0c line a baking tray with baking paper draw a 20cm circle on the paper and turn over
  • use an electric mixer to whisk egg whites in a clean dry bowl until soft peaks form gradually add sugar 1 tbs at a time whisking well after each addition until sugar dissolves and mixture is thick and glossy add cornflour vinegar and vanilla and whisk until just combined
  • use a large metal spoon to spoon mixture onto the prepared tray use a palette knife to shape into a 20cm disc using the circle as a guide smooth the sides bake for 11 2 hours or until dry to touch turn oven off leave pavlova in oven with door ajar to cool completely
  • meanwhile place the butter lemon juice lemon rind and extra sugar in a medium heatproof bowl over a saucepan of simmering water donu2019t let the bowl touch the water cook stirring occasionally until butter melts whisk in egg yolks stir for 10 mins or until mixture thickens transfer to a small bowl set aside stirring occasionally to cool cover the lemon curd and place in the fridge to chill
  • use an electric mixer to whisk cream and cream cheese in a large bowl until soft peaks form whisk in icing sugar and extra vanilla use a spatula to gently fold three quarters of the lemon curd into cream cheese mixture to marble
  • place the pavlova on a serving plate spoon over lemon curd mixture and drizzle with remaining lemon curd top with raspberries and pistachio to serve
