- combine oil vinegar and garlic in a small screwtop jar season with salt and pepper shake to combine then set aside
- wash potatoes and cut into thick slices place in a large saucepan and cover with cold water cover and bring to the boil uncover and cook for 8 minutes or until tender but not falling apart drain well and transfer to a large bowl
- while potatoes are still warm shake dressing again and discard garlic pour two thirds of the dressing over potatoes gently turn to combine without breaking up potatoes cool to room temperature
- arrange potatoes on a serving platter and sprinkle with onions cornichons and parsley drizzle with remaining dressing to serve
